Nihonshu (日本酒 / Saké)

Other than beer, nihonshu is the most popular alcoholic beverage consumed at sushi shops. A nihonshu that pairs well with sushi should be dry, with a crisp finish that leaves no aftertaste. It should have a cleansing effect on the palate, washing away the fat and flavors of the previous bite, leaving your tastebuds ready to experience the next piece of nigiri. 

Pictured above is a honjozo junmai sake from Midorikawa Shuzo brewery in Niigata prefecture. A dry, smooth, and fairly inexpensive nihonshu that pairs very well with Sushi Yoshizumi's akasu shari.
